Spicy Sze Chuan Dumplings

How often do my men come into the kitchen and voluntarily help me fold 92 dumplings? Rarely I say. But when they know you are making THE "spicy dumplings"?  Oh... then I can assure you they know their role pretty well thank you.

Nothing beats red spicy Sze Chuan dumplings on cold winter nights.
